This urban sanctuary, seven years in the planning, has beautifully brought Sydney’s original Department of Education, which was originally built in 1915, back to life with exquisite design detail. The magnificent Victorian stone-faced building has been sympathetically preserved to its original grandeur. Inside, a serene, calm space has been created, with Aperture, an art-filled courtyard lounge, just beyond the lobby, taking centre stage, with its verdant vertical garden and unique floral light installation.

One of the standout features of this incredible hotel is the service, which is friendly, open, and quintessentially Australian. The aim is to immerse guests into Sydney life and a rich programme of activities has been created by the ‘Capella Culturalists’, social hosts, who are more like a local friend.

Generously sized suites have high ceilings and a separate living area with luxurious bathrooms that showcase double vanities, a dual head rain shower and standalone deep soaking bathtubs. The roof extension means that the four Prestige Suites, on the upper floors, have an expanse of glass windows flooding them with light.

The signature restaurant Brasserie 1930, created by Brent Savage and Nick Hildebrandt of the renowned Bentley Group, is one of Sydney’s best new restaurants. An Australian take on a classic French brasserie, the restaurant is an elegant old-world space. Its menu adopts a local ethos with all dishes sourced locally and complemented with Australian and global wines. Afternoon tea at Aperture offers a menu of Australian botanical tea and pastries among the lush indoor-garden setting and there is already a long waiting list, so we recommend booking in advance! McRae Bar, a modern rendition of a Victorian-style drinking den is perfect for a pre-dinner drink or a nightcap within its moody-lit setting.

Pamper & Play
 

The calming, minimalist design of the spa focusses on natural materials and uses products by Synthesis Organics, a plant-based skincare company from Byron Bay. Treatments emphasise native plant scrubs and peels, connecting you to the indigenous origins of regional Australia. You’ll also find a gym and pool in the space once occupied by a government art gallery.
