Sabrage at Sunset at The St. Regis Le Morne
As the sun drops behind Le Morne Brabant and the lagoon turns glassy, guests begin to gather near the shoreline at The St. Regis Le Morne. Then a member of the team appears carrying a silver saber and a chilled jeroboam of champagne.
This is Sabrage at Sunset, the hotel’s evening ritual and a nod to the original St. Regis in New York, where Caroline Astor marked the start of the night with champagne. Here in Mauritius it feels far less formal. People arrive barefoot from the beach or pool, still warm from the day.
With one clean motion the bottle is opened, the cork arcs into the air and glasses are poured. It only takes a few minutes, but it gently changes the mood of the evening.
It’s a small moment, but a memorable one, less about ceremony and more about marking the transition from day into night on one of the island’s most beautiful stretches of coast.

And once the sun has set, the evening naturally continues by the water. The bartenders have even shared the recipe for one of their favourite cocktails, the Negritta, so you can recreate a little of Le Morne at home.
The Negritta
Ingredients
-
50ml tequila
-
30ml Aperol
-
30ml fresh pineapple juice
-
15ml fresh lemon juice
-
15ml sugar syrup
-
10ml egg white
-
2ml orange bitters
Method
Add all ingredients to a cocktail shaker with ice and shake well.
Double strain into an old-fashioned glass over ice.
Garnish with an orange wheel, mint sprig and edible flowers.
